Cauliflower Pizza Crust

If someone were to tell me 3 months ago I would be eating veggie pizza, I would have laughed at even the thought much less the statement. Meat belongs on pizza, and vegetables belonged in the garden…was my thought process. I guess the key word there is “was.” A lot has changed in just a short 90 days. (Give or take)

When me and Mike first dove into Veggie Pizza, we used pre-made dough from Trader Joes. Which was amazing, if you ever get a chance to try it you should, very easy to use and much better for you than the pre-made dough in a can you can get. Since I have to watch my sugars and carbohydrate intake, we then moved to using tortillas for the pizza base. These made for a quick assembly, and toasted up a crunchy crust.

This brings us up to about a week ago. I follow Tiffany over at THE GRACIOUS PANTRY, and she posted a Cauliflower Pizza Crust recipe. Willing to try just about anything I was very intrigued. I even commented saying I wanted to try it, and she responded with telling me I would be delightfully surprised and the flavor that comes from the crust would amaze me. She nailed it, just nailed it! The flavor is astounding, and quite honestly the best tasting pizza I have ever had. I realize these are Big Words, but I encourage you to try it and experience it for yourself!

After trying the recipe last week, we decide to make it again the other night. We did make a few changes, which our taste buds enjoyed. So lets get to it!

This is enough ingredients to make a cookie sheet and a small round cake pan full of pizza. (I will admit my mouth is watering as I type about this!)

“THE” List

 

 

2 Cauliflower

2 Eggs

2 Tablespoons Garlic Powder

1 Teaspoon Black Pepper

Sprinkle of Parsley and Garlic Powder (On top of the crust before baking)

“THE” Steps

 

 

Fresh Cauliflower

Take your Cauliflower and cut the greens off, and then chop them up in little pieces. They don’t have to be perfect pieces as you will be smashing them later. I can not cut mine up too little as the container I steam them in has big wholes.

I use my rice cooker as a steamer. Which works remarkably well. Although I can not steam both cauliflower at the same time as the container is small, but it steams rather quickly so I don’t mind waiting.

Smash Away

After its all steamed up, whip up the eggs a bit, then add them to the bowl of cauliflower. Add in the Garlic Powder and Pepper. At this point you can add in any spices you enjoy. Don’t be afraid! Then have some fun and smash away. I use a traditional plastic masher I purchased from the Dollar Store. (Woot for me) If you don’t have one of these as I didn’t about a month ago, you can use a hand mixer as well. Just anything to get most of the cauliflower all mashed up. A little lumpy is A-Ok.

Then pour the mixture into your cookie sheet. I believe you could use any pan, but I would use one with a little lip on the edges. As you can tell by the photos I had enough to fill a large cookie sheet and a small cake pan.

I then sprinkled some Garlic Powder and Parsley on top for added flavor. Again, here is where you could add any other spice you enjoy! Go Crazy!

Now its ready to bake. Yes you read that correct. This recipe you cook the crust before “decorating” it with your fav veggies.

375 degrees, for 30mins. The edges will get brown, but you want to make sure the whole pan gets brown. (At least that’s how I enjoy it.)

Toasty Golden

After its golden, now its time to add the toppings. Let the real Fun begin!

I will just share quickly what we add to give you some ideas.

1 onion, 1 green pepper, 1 tomato, 1 cup of frozen spinach, ½ cup sun dried tomatoes. We have added chopped up kale before which provides a nice crunch when baked. Pretty much anything goes here!

We split the pizza in half at this point. Mike’s side had Cheddar Cheese, and my side I made a mock type of cheesy flavored powder.

1 cup Cashews

1 ½ cup Nutritional Yeast Flakes (I find it at Whole Foods)

Dash of Sea Salt

All added into a food processor and processed until it becomes a powder form.

*Side note, this made a lot. I put the rest into a 16 oz Mason Jar (I love my Mason Jars) and have been storing it in the fridge. I added some to my salad the other night, which added a really nice cheesy flavor.

Before putting it back into the Oven

Then pop the pizza back into the oven for about 12-15mins just long enough to warm up the veggies and melt the cheese, (if you added it.)

This meal is very filling. Our cookie sheet was cut into 12 pieces. I ate 4, and was completely satisfied. The next day left over’s were even better, if you can imagine that. We had enough to share with my Mom, Sister, Niece and Nephew, which were all a bit nervous to try, but equally enjoyed it! That’s always a plus.

    My boyfriend says he won’t eat cauliflower, but I’m thinking of making mashed cauliflower and telling him it’s potatoes, and now I’m thinking of making this and telling him it’s just homemade pizza dough!!
